I am new to the commerce facility, I would like to have the number of items I have left in stock decrease automatically as they are sold, I want this information to be available to customers. Is this possible?

Depends what e-commerce program you are using, some offer certain php scripts and features etc.

Yes, this "inventory level" feature is available in most carts offered here at VodaHost, and some even offer the ability to turn it off if you desire.

You can see this for yourself by viewing some of the Video Tutorials for OsCommerce, in the "inventory setup" and "cart setup" phase....
