On my form you can select various types of fish with a radio button. How can visitor "de-select" an already selected radio button. Each radio button is its own "group." If not possible to de-select (or un-select), can I "reset" just the radio button fields on the form if the user chooses to?

No, you CAN'T unselect a radio button, nor reset only the radio buttons. You have two options: to use check boxes instead of rado buttons, or to add a "None" radio button to each group
