You would need a dedicated ip if you wanted to run encryption or protect sensitive information, rather its online applications, or processing credit cards on site. This generally also generates the need for an SSL certificate to show that there is encryption in place. There are other reasons as well but these are the most common ones.

Just a question again, sorry, But I use paypal for my products and do not have sensitive info saved, just the basics like address, phone #'s emails. thats it. What do you think?

If you check out at paypal you are utilizing their info for sensitive information. If you use common info that could be found in a fone book, then no problem, or it shouldnt be a problem unless you blatantly release their info or sell it.
