How many databases can i create and is it possible to install modules from fantastico but saying to the cpanel to make mysql archives in a especific database? Because everytime you install something from Fantastico a new database and a new user are created (and i want to use some database and user created before by me) Thanks

No, applications installed through Fantastico will create their own databases and users. If you install the same applications manually, you may have the chance to select database name and user. You can install unlimited databases, you are onlu limited by your total disk space.
