I have a few questions to whom ever is able to answer them, if I may.

1. Can I install Coppermine photo gallery from Fantastico to Soholaunch?

2. Is there a feature for adding a rating system to my pages? If there is can you tell me exactly where to find it?

3. Is it possible to add a feature where my visitors can leave a comment on different pages of my website? Similiar to the guestbook, but for different pages.

4. Can I install Open Realty from fantastico to Soholaunch.

3. See number 2.. its already enabled for products themselves.. if you want it on other pages you can code it in.
4. No

If you install anything from fantastico into the same directory as soholaunch you will overwrite it and it will no longer function.

Check the addon site for whats available to add to soho as a plugin or ADDON program.
